This unit will expand on the idea of pickling as food preservation. The students will be introduced to the history of pickling; will review the safety requirements when doing preservation; will compare the nutritive value of pickled foods to fresh foods; will study the science behind using pickling as a food preservation technique; and will study the vast array of foods that can be preserved by pickling. The unit includes various pickling labs. 2008
